Stuffed Mini Peppers

Mini peppers are a sweet treat you can feel good about treating yourself to, but they’re not just for salads. With a little prep time, stuffed mini peppers make a fantastic appetizer that looks lovely, tastes divine, and still offers some nifty nutrients.

Ingredients

  • 6 mini peppers
  • 4 oz cream cheese, softened
  • 2 green onions, chopped
  • 4 slices bacon, cooked and crumbled
  • 1/2 tsp garlic powder
  • 4 oz cheddar cheese, shredded
  • 1 tsp Worcestershire sauce
  • 1 sprig parsley


Instructions

  1. Preheat oven to 400 degrees.
  2. Line a cookie sheet with foil and spray with non-stick cooking spray. Set aside
  3. Combine cream cheese, cheddar cheese, green onions, bacon crumbles, garlic powder, and Worcestershire sauce, and whisk until smooth.
  4. Slice mini peppers in half length-wise; remove seeds and membranes.
  5. Fill the sliced mini pepper halves with approximately 1 tbsp of the cream cheese filling.
  6. Place stuffed mini peppers on prepared cookie sheet.
  7. Bake at 400 degrees for 10 minutes until cheese is melted and bubbly and peppers have softened.
  8. Serve hot, but allow the mini peppers to cool slightly before eating to prevent mouth burns. Safety first! Remember, this tasty treat just came out of a 400 degree oven.
